EASY PASTA SALAD

DIRECTIONS 1. Cook pasta according to package directions in salted water. Drain. Rinse until cold water to stop cooking and to cool. Drain again. 2. Prep all the vegetables by peeling and dicing or shredding the carrots and cutting up the cauliflower. 3. Combine everything into a large bowl and add Italian dressing to taste. 4. Refrigerate for at least 1-2 hours before serving. 5. Enjoy! LAURIE’S NOTE I like to keep mine pretty simple, but you can go as crazy as you would like!

INGREDIENTS

• 1 lb. Box Pasta of Choice • 3-4 Carrots PEELED + CUT INTO SMALL PIECES OR SHREDDED • 1/2 Small Head of Cauliflower CUT INTO SMALL PIECES • 1 Bottle of Favorite Italian Dressing TO TASTE • OPTIONAL Other Vegetables (Broccoli, Peppers, Olives, Tomatoes, Etc.) • OPTIONAL Meat or Cheese (Salami, Pepperoni, Parmesan, Mozzarella, Etc.).
