GROUNDTURKEY
INGREDIENTS • 6 cups Cooked Turkey • 1 Onion
PATE ACHOUX (PUFF) • 3 Large Stalks Celery • 3/4 CupMiracleWhip • Salt/Pepper to Taste TURKEY PUFFS Ground turkey ismy
Using a food processor add 1/3 of each the turkey, onion, and celery and pulse until finely ground. Move to a large mixing bowl and continue with the second and third batch. Salt and Pepper to taste after each addition. Add the Miracle Whip and combine until evenly distributed (you can add more or less depending on how dry your turkey is or how wet you like the filling). Slice cooled Puffs in half add and fill with the ground turkey mixture. You can now stop there and put the top back on the puff; or you can add stuffing, cranberry sauce, mashed sweet potatoes, any other thanksgiving leftovers you’d like! Serve cold •

I got the idea for the turkey puffs froman old family friend Toni Bordnerwhowouldmake chicken puffs for potlucks. Whenever shewouldmake them, it remindedme ofmy own grandma, and I decided to combine her ideawithmy Grandmas recipe.

In a medium to large sauce pan bring butter and water to a boil. Stir in flour and salt all at once and from this point on do not stop stirring. Cook flour mixture over medium heat till it no longer separates. Now remove from heat and continue stirring till the mixture cools slightly (only a couple minutes). Add eggs one at a time beating it in completely (until smooth) after each egg. It will look goopy at first after each addition don’t worry just keep beating till smooth. Fill Piping bag with mixture and pipe dollops (roughly a heaping teaspoon) of banner on to either greased or parchment lined cookie sheet. Leave 2 in. between puffs. Bake for 15-20 minutes depending on oven and size of puff till golden brown and puffed. Leave to cool while you make the filling. •
