DIRECTIONS 1. Heat oven to 425 degrees and line baking sheet with parchment and silicone. 2. In a large bowl combine flour and butter together using your fingers or a fork until it creates a bread crumb mixture making sure to not melt the butter. 3. Add the beaten eggs, sugar, blueberries, and baking powder and gently combine using a wooden spoon. 4. Slowly add the milk and vanilla and fully combine (it will be a soft, slightly wet dough). 5. Using a clean work surface cover with flour and turn out dough onto it. Sprinkle the top with flour and pat out dough slightly then fold in half. Turn 90 degrees and fold in half again. (This will help create a soft layer in your scones) (don’t overwork the dough and use extra flour if the dough is too sticky to work with). 6. Gently roll out using a rolling pin until about 1” thick. Using a circle cutter (or a knife if you prefer a square or triangle scone) cut out scones by pressing down not twisting the cutter. You can re roll scraps and roll out again to use all the dough, but the second roll is not as tender. Place on prepared baking sheets and brush the top with the egg wash making sure to not get it on the sides so that they rise. 7. Bake for 15 minutes or until they are risen and golden brown (depending on the size of the scone the baking time may differ).. 8. While the scones bake in a medium to large bowl beat heavy cream with an electric mixer or by hand until medium to stiff peaks form. Add sugar and cream cheese to cream and beat until smooth and fully combined. (Stop once incorporated to not over beat). 9. Transfer to serving bowl and refrigerate until serving. I preferred scones warm out of the oven and served with the faux cream and jam. Can be served plain or any other toping of your choice. Store in the fridge. •
