How do you define success? So many of us spend endless hours, or even lifetimes, chasing after our dreams. Those dreams could be exhibiting champion livestock, owning thousands of acres, selling the top genetics, owning your own business, winning the Super Bowl or being the President of the United States. Once you accomplish your goals, however, is it doing so that makes you successful? The world tells you, yes. I have recently come to realize, however, that while you should always strive to be your best and compete to win, it is what you do to reach your goals that defines how successful you truly are. Spending quality time with your family and friends, being there for people when they need you, how you make others feel, never cutting corners and being able to look back at your life with no regrets on how you got to where you are is so much more important than any banner, trophy, or high honor. Colossians 1:10 says, “so that you may live a life worthy of the Lord and please him in every way: bearing fruit in every good work…” This issue of The Showtimes is packed cover-to-cover with great livestock and products, but more importantly great people. Not only do we appreciate your business, but we also appreciate the kindness that this industry has shown us. It does not go unnoticed.

WHEN YOU HAVE A TOUGH CLASS OR A PAIR OF ANIMALS IN A SHOW YOU ARE JUDGING, HOW DO YOU APPROACH THE SITUATION? Tough pair or tough class doesn’t really differ from any other class no matter the quality. I just work through my progressions and make sure my heart and mind agree. 8. WHAT IS SOMETHING THAT SOMEONE WOULD BE SURPRISED TO LEARN ABOUT YOU? I played Junior college basketball. 9. WHAT’S YOUR BEST PIECE OF ADVICE? Believe in yourself. It’s okay if your beliefs differ from those around you. Be open minded, but trust yourself and stay strong to who you are. 10. THIS IS WHY I SHOW… Because nobody has it better than this Industry!

3. IF YOU COULD BUILD THE PERFECT STEER, WHAT WOULD HE LOOK LIKE? I don’t believe we can ever agree on what’s “perfect”. I do believe strongly that we can chase and find greatness. A great one is still productive enough to look like it would be easy to raise but elusive enough in its look and presence that you know they are not easy to get or make. 4. WHAT IS YOUR FAVORITE THING TO DO OUTSIDE OF CATTLE? That question is slightly confusing because for me life without cattle is like life without air. I do enjoy watching football and I’m also the worst coyote hunter in the history of hunters; but I still enjoy doing it. 5. HOW DO YOU ENCOMPASS YOUR BACKGROUND AS A CATTLE PRODUCER INTO JUDGING A STEER SHOW? I’m a cow guy. Our entire operation’s success is directly related to the quality of our calf crop. The self-awareness to know where your genetics needs improvement is important. The mix of what sells good and what is easy to produce can also be a challenge at times. Having experienced all aspects from clipping, breeding, calving and showing while winning

are obvious contenders. I appreciate them so much. But they will understand that my personal influence came from Dan Hoge. Dan helped me in my early transitional years when I was trying to figure out my direction. Dan was one that truly believed in me before I had the confidence to believe in myself. I was able to relate with his very competitive nature. He pushed me to become a successful livestock judge. He put my name out in the judging circles during the early years and helped me secure jobs. I will always appreciate his influence and encouragement. He would always say, “It’s going to be good, you just go out and be you.”

1. WHAT ARE YOU LOOKING FORWARD TO THE MOST ABOUT JUDGING? The honor and privilege to get out in the ring to represent the historic American Royal. I’m excited to be a part of the rich history of this nation’s best livestock show. The opportunity to evaluate the most competitive families and best show steers this country has to offer is a thrilling endeavor and I’m proud to be a part of it. 2. my first question is “What is your goal?” for the year. Everyone is different and I know by being able to do the ground work from the beginning it will help finding the right animal for each family.

WHAT IS YOUR BACKGROUND? I reside in Dunlap, Iowa and am the owner of Tice Show Cattle. We will host our inaugural sale this October in Dunlap. In 2008, my best friend, Tim Schaeffer and I began the partnership of Schaeffer-Tice Show Cattle. We are focused on marketing maternal genetics across various breeds. We recently held our annual sale in Hagerstown, Indiana and are also involved in multiple sales throughout the year. I am originally from Lebanon, Pennsylvania. I attended Black Hawk College and was a member of the Livestock Judging Team. After college, I joined the Sullivan Farms team and worked to become the Show Barn Manager. During my 18 years with Sullivan Farms, we were honored to have success in the show ring with countless National and Supreme Champions in multiple breeds. I also received the Herdsman of the Year awards for both Shorthorn and Chianina breeds. WHAT IS YOUR CURRENT INVOLVEMENT IN THE INDUSTRY? I am the owner of Tice Show Cattle and am excited to host my inaugural sale , October 15th in Dunlap. The sale will feature an elite group of multi-breed heifers and steers. As stated above, I also have my partnership with Schaeffer- Tice Show Cattle. I currently serve on the American Chianina Board of Directors. WHAT ARE YOUR GOALS/PLANS FOR THE FUTURE? We all have life long connections and that holds true for Tim Schaeffer and myself as we have pushed each other to grow and improve. There are many reasons I have made my home in Dunlap, but it took hard work and dedication and I had a great mentor in John Sullivan and his family. The Sullivan family and crew all took a chance on a no name kid from the East Coast. I am gratefully for their mentorship and lifelong friendship that have helped me get to where I am today! WHAT/WHO HAS BEEN INFLUENTIAL TO GET YOU WHERE YOU ARE TODAY?

Very honestly, a list too long to mention. From an early age I spent a lot of time just listening and gathering ideas, to my family that supported the idea of this growing and going forward with a plan, to all the people, crews, and operations I got a shot to be involved with, to now all of the great people who have worked alongside of us continue to be influential to me. ANYTHING ELSE YOU WOULD LIKE TO SHARE… Enjoy the ride. This business can be a lot of fun, very rewarding and you can learn a lot. It also can be defeating, stressful and get you down at times. But with hard work, effort, dedication and a good team surrounding you, it can be the best industry in the world. Soak it up, embrace it and enjoy the great people you meet throughout. They will all play a role one way or another making you successful.

WHAT IS YOUR BACKGROUND? I grew up in eastern Pennsylvania and honestly grew up showing horses. I didn’t purchase my first show heifer until I was 15 in 1999. Developed a small group of cows purchasing show heifers until I relocated to Hagerstown, IN with about 25 head 17 years ago. WHAT IS YOUR CURRENT INVOLVEMENT IN THE INDUSTRY? I currently own and operate Schaeffer Show Cattle with my wife Emily, Sons Braylen and Colyer, my parents and the best crew you could ask for. We run 300 multi breed cows with a heavy focus on our youth and 4-H show heifer market, extensive genetic sales and a select group in our bull battery for semen sales. WHAT ARE YOUR GOALS/PLANS FOR THE FUTURE? I am just trying to raise, generate, and create the best livestock and genetics we possibly can that allow our customers and families the best shot at success. INGREDIENTS • 500g Bread Flour • 10g Salt • 12g Instant Yeast • 40g Unsalted Butter Softened • 320ml Cool Water DIRECTIONS I use a stan mixer with a dough hook, but you can also make this by hand following the same directions.

MEATBALLS

INGREDIENTS • 1 lb Ground Beef Thawed

• 1 Medium Onion Finely Diced • 10 Saltine Crackers Crushed by Hand • 1 Egg • 1 Jar Pasta Sauce Brand of Your Choice • 1 Package Provolone or Mozzarella Cheese Sliced • Salt and pepper to taste

DIRECTIONS • Mix ground beef, onion, crackers, egg and salt and pepper in a large mixing bowl. Make sure all ingredients are well combined without over mixing. • I use an ice cream scoop to make uniform meatballs, but a spoon works as well. Form all the mixture into desired sized meat balls. • Heat a large skillet over medium high heat. Once skillet is hot add meatballs sear on all sides. Cook until cooked through. • Add the pasta sauce over the meatballs and cook until heated through.

• Put the flour into the mixing bowl and add the butter. Add the yeast at one side of the bowl and add

the salt at the other, otherwise the salt will kill the yeast. Start the mixer to combine. • Add water a little at a time, combining well, until

you’ve picked up all the flour from the sides of the bowl. You may not need to add all the water, or you may need to add a little more – you want a dough that is well combined and soft, but not sticky or soggy. Keep going until the mixture forms a rough dough. • With the mixer set at medium speed, knead the dough for 5-6 minutes. Remove the dough hook, form the dough into a smooth ball place back in bowl cover with plastic wrap or a towel and leave to rise at room temperature for 1-2 hours to double in size. • Line a baking sheet with parchment paper. Divide dough in half and flatten out into a rough rectangle then roll into a log/French loaf shape (tucking the ends under and place on prepared baking sheet with the seam side down. Repeat with the second half. Loosely cover with plastic and leave to proof for one hour. • Preheat the oven for 425. Place a pan with hot water on the bottom shelf of the oven (this will help make the bread crusty) Using a sharp knife slash the top of the loaf with some diagonal marks. • Bake for 25-30 minutes or until golden brown and it sounds hollow when tapping the bottom. Leave to cool on a wire rack.

DIRECTIONS • Preheat panini press – or preheat the oven to 350 degrees. • Once the bread is cooled completely slice in half the long way but not cutting through. And then into desired sandwich size. Place meatballs on the sliced bread, then cover with slices of cheese. • Cook in a panini press until crispy or cheese is melted or in the oven ‘til cheese is melted. SANDWICHES
