MUFFIN YOUWILL EVER EAT

• 1 Cup sugar • 2 large eggs • 2 tsp. baking powder • ½ tsp. salt • 1 tsp. vanilla extract • 2 Cups all-purpose flour • ½ Cup of milk • 2½ Cups blueberries fresh or frozen I use freshly frozenwild blueberries still frozenwhen I mix them in so they don’t juice)

• Beat in the remaining flour then the reaming milk just until everything comes together. Scrape the bottom and sides of the bowl to make sure everything is combined. • Add the fresh or frozen blueberries and mix by hand until evenly distributed (if using frozen the mix will stiffen from the cold but that is okay!) • Scoop batter into the prepared muffin tins. (I use a standard ice cream scooper or a heaping ¼ cup scoop) • Bake for 30 minutes or until they are lightly golden, and a toothpick comes out clean • Cool and enjoy! They are awesome warm, room temperature, or cold in the fridge!

DIRECTIONS • Preheat oven to 370 degrees F. • Grease or use liners on a 12 cup muffin tin.

• Beat together butter and sugar for one minute • Add the eggs one at a time and fully incorporate before adding the second. • Add vanilla, baking soda and salt • Beat half of flour then half of milk mix thoroughly
