LAURIE’S HOMEMADE
Serves 4-6
INGREDIENTS CHICKEN • 4 lbs. Boneless Skinless Chicken Thighs • 4 Tbs. Olive Oil • ½ Tsp. Garlic Powder • ½ Tsp. Onion Powder • ½ Tsp. Dried Oregano • ½ Tsp. Dried Basil • 1 Tsp. Salt • ½ Tsp. Pepper SAUCE • 5 Cloves of Garlic Finely Minced • 1/4 Tsp. Sesame Oil • 1/4 Tsp. Fresh or Ground Ginger • 1 Tsp. Rice Wine Vinegar or White Vinegar • ½ Cup Brown Sugar • 1/4 Cup Soy Sauce • 1 Tsp. Garlic Chili Paste or Chili Flakes

DIRECTIONS Preheat oven to 375 Degrees. Trim all the chicken thighs thoroughly of any fat or skin and place in gallon baggie or bowl. Cover with all the dry ingredients and mix till evenly coated. Line a baking sheet with either parchment paper or foil and lay out chicken flat in an even layer. Bake for one hour till cooked thorough check at the 45 min. mark. Remove from oven and set on counter to cool slightly while sauce finishes. When there is roughly 5-10 min. left on baking the chicken sauté the garlic in a small pot with the sesame oil. When it starts to slightly turn light golden brown add the rest of the ingredients and simmer over low heat till it slightly thickens into a sauce. Test it at this point and if you like it sweeter add a tablespoon of honey or brown sugar if you want it saltier lightly salt to taste. Chop the chicken into bite sized pieces and in a bowl cover with the sauce and stir till complexly coated. Serve over Rice and enjoy!!
